What we store on your device, and why.
A cookie is a small file a website stores on your device. This page tells you exactly which ones we use, what each one does, and how to turn them off. It is short, because we do not use many.
What we use
Two categories. One you cannot switch off, one that never loads unless you say yes.
These make the site work. They keep you signed in, remember your language, hold your booking in progress, and protect forms against cross-site request forgery. Without them the site cannot function, so they cannot be switched off.
We use Google Tag Manager to load Google Analytics, which tells us how many people visit and which pages they use. Nothing is requested from Google, and no cookie is set, until you press Accept on the banner. If you decline, or simply ignore the banner, no analytics script loads at all — not a reduced version, none. Your choice is remembered on your device and you can change it at any time by clearing your browser storage for this site.

Turning them off
Analytics only run if you accepted them. To withdraw that, clear this site's data in your browser and the banner will ask again. Separately, every browser lets you block or delete cookies under Settings, then Privacy, and Google publishes an official opt-out extension that stops Analytics collecting anything about you on any site.
If you block all cookies, you will not be able to sign in, hold a booking, or submit a form. Declining analytics has no effect whatsoever on how the site works.
Changes to this policy
If we add or remove a cookie, this page changes with it — before the cookie is set, not after. We will not quietly start tracking you and leave this page saying otherwise.
